আমিষ বা নিরামিষ রান্নায় হিং ব্যবহার করা হয়। যেমন- যদি খাসির মাংসে গন্ধ থাকে, তাহলে ভাজার সময় একটু হিং দিলে গন্ধটা চলে যাবে। নিরামিষ রান্নাতে পেঁয়াজের গন্ধ আনতে আদার রসে হিং ভিজিয়ে ফোড়ন দিলে অনেকটা পেঁয়াজের গন্ধ আসবে। ডালে হিং এর ব্যবহার, ডালের স্বাদ বারিয়ে তুলবে বহুগুণ।

It’s also been known as the devil’s dung and stinking gum, as well as asant, food of the gods, jowani badian, hengu, ingu, kayam, and ting. It is a dark brown, resin-like substance that is derived from the root of ferula.
